It’s not easy to find a well-balanced Honey Processed coffee; quite often the fermentation due to fruit overpowers the crisp flavours of coffee bean. But when you get it right, it is pure melody and this one had us singing “On the Road Again” (Neeraj and Jacob’s favourite while on coffee hunt).After double sorting and float removal these coffees were carefully pulped just enough to remove the skin and beans were straight away put on raised beds with most of the honey (mucilage) still sticking on. Carefully planned raking and drying has resulted in a well balanced red honey full of sweetness of apricot, grape, honeydew, watermelon and mild orange.Best enjoyed as? Of course black – on filter (AeroPress, Pour-Over or Immersion). It goes well with a dash of milk and sugar as well but please don’t waste it in a cold brew.
